Nope a Gary Stu/Mary Sue is a character who is absolutely flawless, with zero problems if Zoro was a Gary Stu ZKK might of actually happened because he'd be so perfect Kaido wouldn't have dodged that attack that destroyed the horn of the giant skull

Also, Zoro wouldn't get lost and he'd be the MC. When I think of Garu Stu characters, they're someone like the MC in Solo Levelling, Zoro ain't like that.
