I have just finished TOTK yesterday, what a ride it has been. Ganondorf's first and second phases were really hard and frustrating, not counting how long the video cinematic was each time I restarted the fight, though thankfully I had a silver Lynel bow and a large reserve of bombs to grind him...
I liked some of them, but this one was my least favorite, save for the Golem battle. My favorite TOTK dungeon remains the Wind Temple by far.
To be honest I haven't played many dungeon Zelda games so I can't judge.

I finally defeated Ganondorf and finished the main story. Phew the...
The four elemental ones, I am about to go for the Master Sword quest. My favorite dungeon so far remains the wind temple, with its boss being my favorite in the game.
There are also the Twinrovas, Ganondorf's adoptive mothers who have fire and ice powers respectively and can fuse.
It's a shame that they didn't appear or had a role in TOTK.

Mine has to be Ghirahim. I also like Veran from the Oracle games.
I wish that they made Ganondorf more manipulative and cunning like his OOT and WW self, and for him to have had more noteworthy and named minions than Phantom Ganon.
I would have loved to see the Twinrovas, Veran or Onox.
I just finished the temple of fire. Great design and atmosphere and cool boss, though the subterran road to it wasn't my favorite and I wasn't a fan of all these rails and wagons
Yeah, improvising constructs and vehicles isn't my strong suit either. I am rather the one who needs schematics or video plans on how to make things up
Man, the boss of the temple of wind is so cool. The visuals, the fight in the sky with the ice blades, the tornadoes and the use of the controlled fall, and the music are awesome.
Who else has fought that golem boss before the Wind of Temple ?
That bastard gave me a hard time, one-shotting me many times with his shockwave attack until I got my hand on the central block and let off all of my frustrations with my spiked ball sword on it, raining hit after hit on it until...
