You don't HAVE to beat him lol. It's recommended that you go elsewhere, explore, become stronger, and comeback and beat his ass. At least for new players.

Get more endurance and/or use the equipment load talisman. At least for me, Heavy armor isn't really better than light armor. And with light armor, you can get mid roll easily. Which is enough for almost all the bosses. You could also try Bloodhound's Fang weapon. It's skill has some iframes...

You mean quick step or Bloodhound's step? While those are decent Weapon arts against npc enemies etc, they are kinda useless against large bosses. Check out some other weapon arts. Lion's claw is a great one. Giant's hunt, Cragblade are great too. Or even the Greatsword's default skill...

Runes dont matter much later on. You can get a shit ton in mid-late game. So don't worry over lost runes. Level vigor to like 30. so that you can actually take hits and learn the moveset of bosses instead of getting one shot. What weapon you using? There's some great weapons in limgrave.
