Coating your sword is probably harder than coating your arms as you're imbuing an external object. Law isn't a traditional swordsman and amplifies his swordsmanship with Amputate, so he may have not bothered with it. I agree with the rest.

It's not about showing each and every technique, it's that Zoro hasn't showed his best yet. This would be like saying that Luffy has shown his all when he only fights in base, uses one G3 attack (but it misses) and has one successful G2 attack, but otherwise hasn't used his Gears at all.
