Brook clearly has a backstory being set up with the HKs. Saul probably saw them at God Valley or at MJ one time when he was a VA. VAs were permitted to look at Saturn’s true form, so it makes sense that they would also be informed about HKs

He has had a formal education which only nobles or the rich have been shown so far and was taught how to play multiple instruments.
He then grew up and was the head of a battle convoy for a wg affiliated country which is where he saw the holy knights most likely as he is essentially a Knight for his kingdom who gave him his swordsmanship training
