First Fight
Jamie Lannister from Game of Thrones
If I could describe Jaime's character arc in three words it would be "Arrogance, Humility and Honor".
Jaime started off the series as an incredibly arrogant and self absorbed character who constantly made remarks at Eddard Stark to get a rile out of him as he felt a bit of a superiority complex in the fact that Eddard managed to defeated sir Arthur Dayne who was widely considered the greatest swordsman in westoros and was someone Jaime idolized.
One thing I love that the show did better was that Jaime and Eddard had a short duel after Jaime found out his younger brother Tyrion has been kidnapped/arrested, In it we get to see Jaime reveling in the combat and it also brings to light the honor he has as a warrior when one of his men interrupts their duel to strike Eddard on his leg, Jaime immediately knocks out the guard as he didn't want to win like that, he is someone who wants his duels to be fair.
Afterwards Jaime flees the capital as he had attacked Eddard who was the hand of the king. He runs off to Casterly rock in the books I believe but in the TV series he goes to Riverun in both cases to join his father Tywin in their upcoming war against the Stark's. Jaime soon gets captured by Robb Stark's forces during one of their battles and ends up their prisoner for 8 months
Jaime is set free and is set to be escorted back to Kings Landing by Brienne of Tarth. During their journey they bond and we get some good banter/chemistry between them. Eventually though they are captured by men working for the Boltons of the north, During their capture they try to rape Brienne but Jaime manages to talk them out of it by saying Brienne is a noble woman and that her father would reward them handsomely upon her return un harmed/soiled. He then tries to bargain with them for their release by trying use his noble status as a bargaining chip and promising them wealth.
However they instead torment Jaime and eventually cut off his right hand which was his sword hand, this severely impacts his mental state as he was a extremely proud of his sword skills and had built his identity around his fearsome combat prowess, he confessed that he would rather die then never wield a sword again, Brienne however mocks him for giving up so easily after getting a taste of the cruelty of the real world, her words inspire him to find new meaning to his life.
They eventually get taken to Harrenhall where Lord Bolton greets them and is willing to let Jaime go but he wants to keep Brienne for being a traitor.
Jaime whilst recovering and in a moment of vulnerability and honestly he confesses to Brienne that when Roberts rebellion was coming to an end and Roberts forces were about to breach the capital city of Kings landing King Aeyrs Targaryen had gone mad and ordered that all the bale fire that was stored under the city be set alight which would have resulted in the entire population of Kings landing being killed all 500,000 citizens., "Burn them all" was what the king had been muttering to himself for hours.
Jaime Killed his own king and in doing so saved thousands of lives in the process, he never revealed this to anyone because everyone immediately judged and shunned him and that frustrated him. Jaime eventually recovers and proceeds onto kings landing alone promising Brienne that he will fulfill his pledge to Lady Stark and send her daughters back home. During his journey back he gets word that Brienne would likely be used as "Entertainment" for the men at Harrenhall, he feels a great debt to her so he proceeds to travel all the way back to free her and bring her along.
Jaime and Brienne while enroute to King's landing learn that King Joffery has died and Sansa stark has escaped. Jaime tied to his duties as kingsguard, cuts off ties with his controlling father and his manipulative sister Cersie in order to better himself, he also starts to take an active interest in his younger son and wants him to grow up right and not under cersie's bad influence like joffery was. He asks Brienne to look for sansa and keep her safe from his family and others that might be looking for her as he does not want to break his oath again.
Jaime grows tired of his sister and her scheming goes to riverun to crush the last vestiges of The North rebellion but without spilling any blood as he had promised lady stark and he succeeds in doing so.

Walter White's evolution into Heisenberg is one of fiction's prime example of great character development.
Once a meek, subservient normal everyday man, Walter's life as a chemistry teacher and family man drastically changes when he's diagnosed with stage 3 lung cancer following his 50th birthday. A terminal illness.
He's in shock. Falls into a little bit of despair. A little bit of disbelief. How can he manage to provide financial stability to his family in the event of his passing, when they aren't very stable in the first place?
Along comes Jesse Pinkman, a college dropout who White himself failed. Together, (with white's chem knowledge and Pinkman as the cook) they would go on to create a new era of meth empire which takes the cartel and other members of the underworld by storm.
Throughout 5 seasons of cooking, killing, cleaning, running from the law, and stacking, the once run of the mil boring and kind family man slowly turns into a cynical, manipulative, cold blooded Kingpin.
His initial goal of providing for his family is slowly left in the dust as he's making far more than he could ever spend in 10 lifetimes, and all that remains is his pride, and a deep rooted narcissism that craves for recognition. He wants people know it's him. He wants people to fear him, acknowledge that's it's his product, wants them to worship his intelligence, he's wants them to acknowledge that he's powerful. No longer weak. And he gets to do all that through his 'alter ego' Heisenberg. As a man who's lived a very average and boring life (his only ever achivement being a part of group who helped in getting a Nobel prize some 20 odd years ago) , giving into this new persona is a gratifying experience, and unsurprisingly comes easily.
Yet, even as he falls deeper into the rabbit hole, becomes more aggressive, ruthless and starts lying as easily as he breathes for his own objectives, on occasions you can still see the Walter White in him. He is still there, cracks within the Heisenberg. In moments of extreme panic, plans go to shit or when he's talking to his family he's still there. After going through so much together, and even psychologically abusing the kid, even at the peak of Heisenberg, he still had enough love and humanity remaining to grant Jesse freedom. That's the beauty of such a character.
In short, Heisenberg is what happens when a man has nothing to lose, everything to gain, meets one final opportunity.
Third Fight
Simon from Tengen Toppa Gurren Lagann
At the beginning of the series, Simon is a timid and insecure young boy who lacks confidence in himself and his abilities. However, as he becomes more involved in the conflict against the series' main antagonist, the Spiral King, he begins to grow and develop into a strong and capable leader.
Throughout the series, Simon undergoes a series of trials and tribulations that force him to confront his fears and overcome his weaknesses. He learns to trust in himself and his comrades, becoming a key figure in the fight against the Spiral King.
By the end of the series, Simon has transformed from a meek and uncertain boy into a brave and determined hero, a transformation that is reflected not only in his actions but also in his physical appearance. His character development is not only significant but also realistic and well-executed, making him one of the most memorable and beloved characters in anime and manga history.
