I feel like I missed something around those chapters, who was in control and when between Pochita and Denji. Why did Mikami stay dead long enough for Denji to make steak out of her?

the last fight at the graveyard, the chainsaw man was Pochita (you can tell by the arms)
meanwhile Denji was hiding in the grave

Why did Mikami stay dead long enough for Denji to make steak out of her?

Denji made a chainsaw out of last Power's blood powers that were inside him and that slowed down Makima's healing

He slowed down her damage transfer (to people she controls) ability using Powers blood.

who was in control and when between Pochita and Denji.

From when the real Chainsaw devil came out to until Power saving Denji's life, it was Pochita in control i think.
After that Denji just used the same trick that Chainsaw devil used to fight the Weapon Devil Hybrids, taking the heart out and letting Pochita fight to bait Makima.

Makima told Kishibe that she wanted to control or be eaten by the chainsaw devil as a fan I guess she didn't really resist
