Kaido should speed blitz him. But if Itachi gets the chance to use genjutsu on Kaido it’s over. He can double down with Tsukiyomi to kill Kaido in a genjutsu, use Amaterasu and step back to let Kaido suffer, or use the sword of Totsuka to seal Kaido.

Kaido can endure a hell of punishment as he is consistently tanking attacks which cuts through his flesh, so I think Kaido could endure the torture in Tsukuyomi.

BTW, Kaido speedblitzes Itachi.

To my understanding, all the LNs are canon.

After Kakashi is hit, he also assumes Itachi could’ve killed him with Tsukuyomi so that adds to its reliability.

But Tsukuyomi is extremely broken and hax; usually, you can break genjutsus with good chakra control as well (afaik) but this kind of method doesn't work against Tsukuyomi.

Genjutsu shouldn’t be broken by haki if you make haki = chakra. It’s the disruption of a regular chakra flow that breaks genjutsu. That requires an intricate knowledge of genjutsu, and even then Itachi trapped genjutsu masters before.
