The manga has already set up how Sanji will gain more AP. He was stating he feels like something about him is changing or off and he's already told us that with his emotions he can increase the temperature of his heat.

Zoro simply threw himself back by using a technique that sends a shockwave , it's not a technique anymore than pushing the floor is a technique. Zoro simply does not have the ability to move through the air like Sanji, and we know because he said so. Plus, if he did, then being thrown off would not be dangerous.
