The stab is worth more than Luffy’s injures because Luffy never took any injuries (him being rubber). All the shadows was doing was straining his body, meaning it was fatigue from over-exertion. Zoro just took Luffy’s fatigue. Luffy was heavily exhausted

1. Sanji wasn't even in a fight mode when Zolo attacked him from behind. Sanji was casually talking to person.
His body wasn't ready for an attack.
2. Zolo had all the time in world to prepare for pain bubble. He knew it was coming.
3. Yes, Luffy barely took any damage in thriller bark. Stab > any damage Luffy received in TB.
Bubble was mostly just a fatigue from shadows and gears.
