This is something I haven't really expanded upon but thought for you to truly appreciate the greatness of Vergo-san you must first learn his roots. I have strong reason to believe Oda has taken inspiration from one of my favourite action actors for a number of reasons.

First off, Scott Adkins for those who don't know is a guy that is famous for being one of the absolute best martial artists in the world, and is an action actor up there with all the big names in that genre. He is famous for his very dynamic fighting style involving great flexible and agile jumps
and for those who didn't know, he is also well practiced with nunchakas and fighting stick (see Vergo uses a bamboo stick). (see how he resembles young Vergo with the same hairstyle btw)
In the movie Ninja (came out before Vergo showed up in the manga) as seen here, Casey Bowman (Scott Adkins) is orphaned in a Japanese dojo and becomes the star pupil, then marries the daughter of the sensei bc he is so chad. As seen in this scene, he is an adept fighter with his stick and basically owns that dojo as the only westerner there

Should also be noted he is always making demonstrations with his fighting stick on exhibitions.

Now let's for a moment check in on Vergo vs Sanji. This was a fight that revolved entirely around kicks where Oda had Vergo refrain from using his bamboo or punches, and only do kicking, just to highlight this moment. I think there is a good reason for this (he'd be destroyed otherwise but let's see deeper into his character inspiration to learn why)

Now to understand the relevance, we need to look at the two highlights from Undisputed 2 and 3 (all before Vergo) where the highlight at the end fights all revolved around broken legs

In Undisputed 3 he had had his chin broken by his opponent but still managed to defeat him in an epic clash both with their legs, where he managed to break his opponent's leg despite having a broken leg himself: a truly epic moment

In Undisputed 2, the protagonist (played by Michael Jai White) had lost to Boyka (Scott Adkins) whose dynamic fighting style involving his dangerous and fast kickjumps had him lose the first round (there were other factors involved as well, but nevertheless) such that he despite being an undisputed boxing champion simply stands little to no chance in matcing Boyka in QCQ. As a result the preperation for the second round all revolved around him learning grappling in order to break Boyka's leg, which he actually did in this epic scene: see from 4:44 where the highlight begins

I'd also add another somewhat loose connection, that in the movie Expendables 2 Boyka plays the right hand man in an underground organisation that sold plutonium illegally to dictators that made high-grade weapons from that (see Doflamingo was specialising in arms deals as that was among one of the highlights in Dressroa)

So I believe he is going to be inspired by Scott Adkins, they resemble one another I’ve always thought and these moments where he plays Boyka stood out as it relates to his fight with Sanji. Vergo is also adept at rokushiki to mirror Adkins dynamic fighting style (and as such I'l give it to Sanji that he wasn't nerfed himself, but Vergo may have actually been rather adept at kicking himself, as such portraying Sanji in a better light).

scott adkins is currently my favorite actor in martial arts jackie chan used to be my favorite but he is fag lol and pretty sure that he is so famous that he could inspire oda to draw a character that looks like him

Oi Oi you can't be serious !
Shanks need screen time for my ultimate respect ...

the reason I love him is that I think he is an iconic character who is able to give us twists we could never imagine ...

while I love him the most in one piece so far ... he will fall much if he end of a same old INFJ of plot
