Law and Kid are luffy's rivals so they gotta fight equivalent character. If Luffy fights an admiral, they'll fight an admiral.

I'd say Law is more of a friend than rival to Luffy honestly speaking (Marineford, Dressrosa) compared to Kid, they're only mentioned as rivals due to both being captains of their own crew but otherwise get along pretty well. Both are also lesser 'pirates' compared to other Worst Gen or New World Pirates.

Admirals are different. Luffy said he has to beat emperors and admirals. Sanji is likely never fighting an admiral just like how he never will fight a emperor
