The only reason Zoro cares to beat Mihawk at all is because he’s the one that holds the title currently. If Shiryu beat Mihawk then Zoro would gun for Shiryu instead

The same thing applies to Ace. He targeted Whitebeard because he’s known as the World’s Strongest Man

Defeating him in 1 on 1 combat is an instant ticket to becoming a Great Pirate

Zoro still wants to be the WSS, but now he has a bigger dream, which is to make Luffy the Pirate King. He's obviously willing to die for both of them and if he dies then he obviously gives them up.

Zoro is not bowing down to Mihawk to abandon his ambition and dream what lol



The bowing shows that Zoro values his captain more than his own pride and dreams, but it doesn't mean that he's giving up on his dream/ambition in that instance, he's just swallowing his pride.

The only time Zoro actively let go of his ambition was in Thriller Bark, when he was prepared to die to save Luffy. But even that wasn't him giving up on it to save himself/live. It was him saying if he can't even protect his captain, then he's not worthy of WSS anyway.
