Think. Brook is 90 now. He and his crew died a long time ago and Yorki died a little while before them. The guy would be 80 or 90 now if this was the case.
Also, maintaining blonde hair at that age is almost impossible unless you dye it. Not even Whitebeard and Rayleigh could preserve their hair color. Pretty much all old characters in One Piece are guaranteed to have white hair.
Not all characters need to be seen dying like Ace and Whitebeard to be confirmed dead. Yorki was sent away on their ship so he could die without infecting the rest of his crew, so I think that would be a proper way to end his character.
