Jinbe has far better mental endurance than Sanji. Jinbe didn't flinch when he was tortured in Impel Down. He was the one waking Luffy up to his senses when Luffy was in his mental breakdown state post Marineford. He didn't flinch against Big Mom and straight resigned in front of her.
Sanji though. He saw Luffy's efforts in Ennies Lobby for Robin's sake, but stupidly believed Luffy would let him go joining Big Mom Pirates. Let himself kidnapped by Bege. Kicked Luffy in WCI like ungrateful bastard. Made cake for Meme. Prioritized with hoes in Onigashima.
Of course weak willed Sanji would faint with Joyboy level CoC while Jinbe survives it.
