It could also be Zoro defending his title against a weaker swordsman and winning with easier difficulty than he did against Mihawk.

The only character that could be an exception is Shiryu, who can kill Mihawk and get his title, or be the challenger after Zoro is the WSS and make Zoro actually defend his title. In which case, Shiryu may surpass Mihawk.

But that's because Shiryu is also a character who's currently growing like Zoro while Shanks/Mihawk/Nusjuro have already peaked.

The one thing I’d like to see from Sanji is for him to Defeat an opponent with a bit more Aura/Edge than what we’re used too. I think the coolest looking character I’ve ever seen Sanji take out is Charlotte Raisin. But it was a One shot……Cool one shot clean panel but still a one shot. @Sir Yasheen @Warchief Sanji D Goat @Dark Knight Sanji @NotTommy I’m sure you guys agree as well ?

I think it fits him. He's not really a character who's meant to be super cool and tough like Zoro or Akainu for example, he's more soft in some ways and is a little more relatable for the average reader. So given that, I'm not surprised most of his opponents are a little less serious than the people Zoro fights.
Still, Sanji himself looks pretty badass at the end of most fights. Even against Wadatsumi, who's an absolute joke of a character, he still had a cool one liner after finishing him.
But if you really want him to defeat a cooler character, then you can hope Oda has him fight DR Brogy this arc or Mars or Lafitte later on
