Imu is somehow connected to his knights. The destruction of the knights affects Imu.
Therefore, when Sanji and Zoro defeat Sommers and Killingham, Imu will lose a portion of his own power, giving Luffy and Loki a chance to force Imu to retreat.
Another likely scenario is one where the powered-up Zoro and Sanji save Luffy and Loki, and Imu, who has a time limit on his stay in Elbaf, retreats. That would be absolutely brilliant, as it would fully showcase Zoro and Sanji as the ‘wings’. But this is less likely than them simply defeating Imo’s knights, who have received a power-up from him.

Anyways flexing against current Zoro or sanji doesn't do much for imu's hype. Also we do not know if Zoro and sanji are done for this arc. They will most likely face sommers and killingham while being nerfed themselves.
