it's literally the same as zoro's where he randomly unlocks conq haki against an opponent he has 0 real emotional or narrative connections to and decides to remember now of all times that his mentor told him he has the potential to unlock it when there were far better times to do that (i.e whole cake island)
luffy's awakening of conq haki is beloved because, one:
it was a very natural progression and had hints to it leading up to the big reveal, i.e him scaring the bull and having an unusual amount of willpower, fearlessness and determination even in the worst situations
two: it was at a pivotal moment for him where he was about to see his estranged brother get beheaded on live broadcast
three: it wasn't dragged out and wasn't just treated as a generic powerup he needed to defeat the villain of the week
sanji and zoro don't have any of these, and i'm certain you know this. the only reason you believe sanji's is better than zoro is because you have this mindset where sanji has to be objectively better than zoro in every way possible even though that has never actually mattered and only makes you look like a buffoon since you spend most of your time hating on zoro rather than spreading your love for sanji (which btw is not quite what i imagine a real sanji fan would do), and you believe that anyone who calls you out on this is a heckin evil illiterate moron who just hates sanji and doesn't want to see anyone praising him no matter what
because it's easier to just blame other people than admit you're not a perfect person, you unfortunately will keep resorting to deflecting no matter what i or anyone say, you would likely even argue down your own parents on this just because you can't bare the concept of reflecting on yourself and not being biased 24/7
