Imu took some of their life span, similar to what big mom did. He has book and summons weapons and can transform. What is this power and why does he take their life span if they are now immortal? This is getting interesting.

Sommers has aged too. I assume the holy knights have immortality but do age. Gunko is the avatar of Imu and doesn’t age because of that. And gorosei have complete immorality and do not age.

I don’t like it that much either. But it makes sense to use it in story writing. Because they are not over powered they just have a hax ability. However once the strawhats figure out how to damage them, it levels the playing ground or the tide turns around. If they are overpowered though then...
