1. Sanji could only be injured in his shoulder if He fights with his Arms
2. If Jinbe's Base Punch didn't work on Sanji's Body, then He have no means of making it work with his Fighting Style

You want me to show you Sanji holding his shoulder against Jabra (Another Martial Artist who uses both his Punches & Kicks to Fight)?
So both Oda & Toei disagree with you, holding his Shoulder in Pain, doesn't mean He used his Arms to Fight,
And i don't know if you realize, but Jinbe has Fishmen Karate which ignores Durability cuz it hits Water inside you, so unless Sanji is only Human who is Alive with 0 Water, i don't see why S-Shark would fail to damage him if He really tries his best
It's fine if you don't wanna agree with how Toei imagined that Fight, but to get to the point where you call it a "Plot Hole" because your fav got injured by a freaking bloodlusted copy of a Warlord, then i really don't know what to tell you
Toei also showed us Zoro struggling a bit against Hody Underwater, something that wasn't shown in Manga,
But i don't remember Fans making a fuss about it & going on a rampage against Toei & everyone associated with it,
