It's not that deep. She's just frustrated that they were unable to do anything against Gunko which is fine, even Jinbe was powerless against her so Nami's strength isn't the issue here. Most of the time when faced with these kinda of monstrous opponents, the M3 are usually strong enough to take care of it in some capacity so don't think it's necessarily wrong for her to have expected more from an ex-Shichibukai in Jinbe. If anything this isn't as much of a slight on Jinbe as it is hype for the Holy Knights and potential gas for the M3 who will most likely perform better against them.
Namis understandably upset. A kid just got kidnapped and we know how much she cares for kids. And this kid was kidnapped despite being under the protection of someone who was a warlord and should be a better guardian than we’ve seen.
Should she yell at everyone including herself sure. But she likely had higher hopes for Jinbe.

At the end of the day the whole regen ting is most likely a DF fruit ability that Imu shares with his subordinates who have the mark and only ting we’ve seen that can counter it is OD Haki like we saw when Joyboy’s Haki undid the summoning or with Sanji when he destroyed Kizaru’s lazer so answer prolly lies there.
Either that or damaging the mark they have somewhere on their bodies to potentially cut the link from Imu. Argument against that would be that Gunko & Saturn got blown to bits by Usopp & Kuma respectively but could simply be that those attacks weren’t anywhere close to the marks or that said characters can move the location of the mark. I wonder how the regen would work against sumin with insane AoE like Hakai. If we see the holy knights dodge Dorry & Broggy then we might have an answer 🤔
