To her, Jinbei is just as strong as zoro so she expects him to do something and not just get caught so easily. Unfortunately for her she just over estimated their power. Against real top dogs, the entire crew is just fodder and then Luffy has to do all the work himself

You dont have to be Luffy to not get fodderized/let the crew be captured, sanji has been protecting the crew Even when he is outmatched and gets hypetooled/loses
Like against Doffy. Jinbei let the Sh's AND children get captured sitting on his ass watching. Sanji ( if it isnt a women ) and Zoro would NEVER allow this, even if they are outmatched they'd stall enough for the crew and kids to run away at least

Put Zoro and Sanji combined in the same situation as Jinbei and both would get fodderized as well. It won't change the outcome
It's not about letting Gunko kidnap the kids, it's them being way too weak to make any difference.
The Doffy situation is a bad example here, because Doffy did render him useless and would've killed the crew if not for Law's intervention.

Other strawhats shouldn't have been fighters because it's Luffy's job to protect them
That's why story should have been just Luffy and Nami
Luffy being fighter and Nami navigating.
You don't really need other strawhats
But Zoro and Sanji can exist because they keep fandom alive

Nami attacked Gunko first and tried to stop her arrow
Usopp blew her up
Brook acted as a shield by tanking Zeus at Nami place
It the end it was all pointless, but Jinbe genuinely spent most of that chapter just standing while Gunko was setting up her arrows.
