We actually have no idea how he does that lol. It's a mystery up there with how Sanji could form flames out of nowhere since Enies Lobby, Zoro being able to cut fire and water, and other things.
Given Imu has a magic grimoire though I don't think it's crazy to say Oda will just start excusing these things by saying they're magic or just not elaborating at all.

The former is strange, but relies on equipment.
The latter is bizarre to the point Queen in the manga and Oda outside of it have alluded to as remaining a mystery for now. I’d be surprised if it didn’t have to do with Power of Love.

- In Enies Lobby arc, we see Sanji spins his legs so fast it heated up.

It does he had Coa shield around his leg so when he stopped his spinning with his right leg friction heat up the Coa shield and that was how first diable jambe born. It baffles me people think Sanji can't use any haki before the time skip while Zoro literally used it Alabasta, even Zeff was probably a haki user and he should gave Sanji the basics. After time skip Sanji can somehow burn his Coa shield with his emotions and i am not sure how he does that though i think it may be a Lunarian thing.

Interestingly, the Toei Animation staff believes Zoro is generating fire (火) when he's using KOH.
We know that Zoro has at least integrated the flame-splitting aspect of the Foxfire Style into KOH.
