You are mistaking Itachi as Orochimaru's goal, as much as Itachi is Deidara's. That's your mistake.
I also feel like you are mixing up Orochimaru's lament about the effort it takes to get Sasuke. He is more complaining about taking down Hiruzen—"at the cost of my arms"—when reposing Kabuto's congratulations on managing to collar up Sasuke.
Like, your comparison only works if Orochimaru had to have Itachi's body specifically, if there were no other options. But the specific Uchiha doesn't matter. His goal is the sharingan, like I keep saying. He does not lose any ounce of desire or will to move towards that.

My claim is that the loss to Itachi was so severe that any goal that could ever include taking out Itachi is by default a No No for Orochimaru just because of the sheer difference of strength displayed during their short encounter.
I get your point, but I'm saying Orochimaru's goal not being Itachi-centric does not change that Itachi has shook Orochimaru so severely touching him is something Orochimaru wouldn't even dare to dream about.
If one tries to make sense with Zoro apparently not knowing he has CoC, the Zoro thing is probably another Daz Bones situation where during the Daz Bones fight, he learnt to listen the breath of all things, but after that fight he couldn't control it, needing to learn to control it
The difference here is that it's most likely due to Emma's property of forcibly taking the users haki, that at one point Zoro managed to stabilize it
But apparently not knowing at that point that not only the haki that allowed him to do it was CoC, but that he unconsciously used adcoc
So he is at the stage where he needs to control it, with Enma being the trigger to develop his leaking haki, but thinking at the time that being King of hell meant mastering Enma, but not knowing at the time, that the haki needed to do so is coc
