Because Zoro could still use CoC coating, yet Gaban criticized how he didn’t know what he was doing.

All i see is someone beimg scared to put their mouth where their money is. Sanji already implied he could upgrade his flames by training his armanent haki, his body was weak to withstand it. You my friend makes no sense. Imagine oda writing zoro dealing with immortals using coc whiles sanji is finding ways to deal with them. Scopper gaban damages a HK with acoc, gets defeated and is thrown down to the guys below cos there are 4 people who has coc down there, luffy , zoro, sanji and Loki. He teaches them how to overcome the HK and then they fight them. Zoro has to figure out he has being using acoc all the time. Sanji needs to allow his body to awaken it and since he is imtelligent, he would be able to coat his flames making it black. That is why oda hss being spamming ifrit jambe cos surtur jambe is coming up.

Kinda like how forms that make up techniques are beating into you until you perfect it in martial arts like karate etc. or akin to folks trying to achieve enlightenment looking back on their martial arts and starting from scratch. Usually in martial arts manga/manhwa at a certain point in order to reach a higher level you have to gain enlightenment that can't really be taught. Reckon this is a similar concept.
Ties into what Loki said about being able to articulate his own power
