I think the main issue with Sommers is that his main challenge was the whole "hugging someone you love covered with thorns" scenario which just got resolved this chapter with the parents. Sommer's dialogue and whole character was about that one thing.
I don't see Oda repeating that for Sanji, nor repeating the hostages plot.
So what would be the specific challenge that Sanji must overcome if he fights Sommers? If it's just having to use acoc, then even Killingham could fit as an opponent.

I think its time we accept that Sanji is not going to get a fight in Elbaph. Loki and Luffy will defeat all the holy knights and Zoro eill take out Dorry and Brogy. The rest of the crew can join in fighting the fire in the library.

I am not going to act surprised if Sanji fights Sommers and Zoro ends up fighting Shamrock later in the elbaf arc once the chapters keep unfolding.
Shamrock coming back will be very good imo, but depending on who is coming to raid Mariejoa if this ever happened.

I swear you Sanji fans love panicking before the Big Fight. Sounds like you wanted Egghead to be something bigger than what it was……So in Egghead a pit stop arc You wanted Sanji to fight Kizaru and defeat Him? while Zoro was stuck with Lucci? while non of the other strawhats are getting fights ? ARE YOU CRAZY? When has that ever happened in One Piece?
Look when we set out to Beat Kaido Sanji got his fight as well as the other Strawhats. In Elbaf We have IMU controlling Gunko, his 2 Commanders in Killingham and Sommers, Domi Reversi Dorry and Broggy. And a bunch of other Domi Reversi Giants…… There’s plenty of fighting to do…….

Oda cares very little about any strawhat but Luffy post ts. In his mind all there dreams are pretty much irrelevant beyond how they can help Luffy achieve his dream of becoming PK and overthrowing the WG. He likely lost his interest in the crew around the MF saga, where he had Luffy interact with some of the most important characters of the story, while the SHP did filler shit with bums.
In Oda´s mind, having the Gorosei upon their introduction fight and struggle with Strawhats would just be an insult beyond belief to them, same with Kizaru. Maybe at EOS, but before that, in Oda´s mind, it makes more sense for the strawhats to be saved by an ancient robot, and Joyboys 800 year old Haki. They´re just not characters allowed to have achievements that rival Luffy in his mind. Oda barely even gave the supernova any achievements that could compare with Luffy, and they´re captains of their own crews.
It’s not like things look gloom in the arc for Sanji, I mean do people not remember there was a point in Wano where these events were occurring at the same time……… and Sanji still managed to get a 1v1 fight. People were doubting Sanji would even fight in Onigashima at one point.
