Sommers heart scene does not make sense. The heart was showed close to his head divided in two parts, with kinetic lines showing the parts were, probably, moving to a place were all the body could regenerate together.

The two face parts were able to merge together as we have seen in the panel, and if the head and the heart moves at the same speed how Gerd found only his heart and not the head too? Sommers head and heart should be in the same spot.

Why it should be Killingham heart? All his parts are being captured by Sanji's group.

The only explanation I have is that probably the heart can't move, while somehow the head can, so the head still continued to roll to an unkown position leaving the heart alone. It does not make sense why the head should be able to move and the heart not, but I don't know.
