Well yeah I've seen a lot of furry simping for Carrot in my dayz which I disliked. I think I can grant myself with the pride of having redirected that simping toward a more narrative realm.. at least for my followers at the time. (hell, people created channels based on my theories lmao)
Now Carrot fans are seeking narrative relevancy more than anything. I often said that Carrot is less similar to Chopper and far more alike to Luffy. Because narratively, this character has a lot of potential, not just as what she represents in One Piece, but as a premisses in its own bubble.
She definitely has the right ingredients to become a main characters in a different story. That's why I found her specifically fascinating. She is a girl, of course, that jumps into the danger out of wonder and that's an archetype that is not often used for women in One Piece outside of little kids and Luffy.
If One Piece had a sequel, a smart author could very well use Carrot as an older main protagonist. Hell.. I even started outlining a story myself in the past.. Well.. if they manage to avoid sexualizing her of course..
