Gear 5 puts his recovery and durability on a different level. Yes, to the extent that he can withstand stabs better (even though he did quite well even back in Alabasta). But it's still proportionate to his resistances.
Even if we remove G5 he had a full fight with Katakuri after being impaled by his trident. Sure swords hurt him but they aren’t his weakness. His weakness is the same as every other devil fruit users, being submerged in water.

If your Opponent's Attack render you unable to defend yourself from being Executed & He does have the time & energy to do so before you can recover through any means, then you were Defeated.

As for his Survivability, All Adv. CoC Users who also have DFs are Near-Unkillable Monsters, Luffy is just another One of them.
WB, Sengoku, Big Mom, Kaidou, Loki & Luffy all fall in same Category (CoC + Top DF).

Blades can indeed be called Luffy's Weakness because his Rubber Defense doesn't work on them,
Weakness doesn't need to be something that works on you but doesn't work on others, it simply needs to be an Exception in said Character's Power Advantage.

For example, Fire is Harmful for almost anyone, but it's still considered a Weakness for Perospero & Mr. 3 & Sommers DFs ... etc
Same for Luffy's Rubber Body & Blades.

Crocodile and Lucci stabbed Luffy dead on and finished those fights.

Katakuri hit him with a glancing blow because he partially dodged, and that was enough to impact the narrative. After, Katakuri stabbed himself to make it even. What are you trying to say, exactly?

What I’m saying is that Luffy isn’t weak to swords or being stabbed he actually performs well against those types of attacks.

Fandom is dumb and makes their headcannon and feeds them over the years until they really believes it is the universal truth.

Right on the beginning when Luffy recruited Zoro he specifically told him he had no problems dealing with swords. Yet people comes with this "Luffy's weakness" since his DF makes him immune to blunt attacks including bullets and cannons (before explosion) like anyone but Kaido and new freaks holy knights and Sanji and his brothers and sister are immune to it. Roger died by fodders stabbing him by the way.

But the real reasons Oda nerfs him is not because he is too strong but because it creates tension. That's why villains usually doesn't have such flaws. Unless they become allies.

Your example is flawed. Fire is considered a weakness to them because it adversely effects their abilities. It’s more effective on them than others because of that. Swords don’t weaken or stop Luffy’s fruit from working. It just has the same effect on him that it has on everyone else.

Either you don't understand the words you say, or you just ignore the fact that you're saying the same thing twice, but using it however it suits you.

I know exactly what I’m saying. You’re just playing slow. Fire stops the abilities of the characters you mentioned earlier. It melts their shit. Swords don’t stop Luffy from stretching or expanding.

Since Kuro and Arlong, know Luffy's own durability and strength is enough to compensate for in-verse rubber's weakness to blades and sword. We know he can break Don Krieg and Arlong's steel with his grip and punch. So without constant nerf like everytime against lesser enemies, Luffy's defense and endurance against Imu's weapons is already that strong. Seeing him keep nerfing himself to receive Loki's attacks in order to launch himself against Imu and he's just going wild at it, it's just repeating what we already knew since pre-TS. So currently, no one aside from Imu (wielding strongest haki in the world + Maki + world weapons) can even truly threaten his life even by abusing his weakness to swords and blades
