Of course Subaru gonna struggles a lot cuz he was a mere human who got sent into Isekai.
While OP World had Super Human to begin with along with normal human. Zoro is a super human, Subaru aren't.
They are thematically different.
ReZero on that note had more Consistent writing than One Piece. Logic don't always works on One Piece
Cuz ReZero actually uses a lot of Realism Approach than Fantasy unlike One Piece.
Again even tho it is bs, its just shown how far Zoro is now in terms of powerlevel.

People used to put the old legends above Zoro, saying they were “stronger than Zoro,” but this chapter put Zoro right back up there.

Gaban cut Sommers in half when Sommers was a much weaker version of himself, and even then Sommers was still able to fight back and exchange a few blows. Zoro is doing the same thing, except he’s doing it against a Sommers who received two power-ups.

And Zoro is doing it casually. He’s literally slicing apart a superior version of the guy, while Gaban did it against an inferior one.
One did it against normal Sommers. The other is doing it against SUPER Sommers.
Zoro’s feats here are way, way more impressive.
The only thing that keeps the discussion from being completely settled is that Gaban used his strongest attack against Imu, but I seriously doubt Zoro wouldn’t be able to do the same thing Gaban did.

Not to mention that this is a “nerfed” Zoro, not even Zoro at 100%, and he’s still destroying the stronger version of Super Sommers.

Not really. These are CDs. People who have typically never known pain, suffering, or fear. Why would they be strong at all?

The thing is, from a story perspective, readers expect Zoro not just to forge a kokuto and be done with it. He needs to learn to use it at its best.
So it can't be forged in his last fight with Mihawk.
It could be forged in his second-to-last fight, which will likely be Shiryu. The kokuto is the PU to defeat Shiryu, then, next fight, Zoro goes all out with aCoC + kokuto to claim the WSS title.

I've always pictured if not a fight then at least a skirmish between the monster trio and the three pre-ts Admirals. Luffy takes on Akainu for Ace reasons, Sanji Kuzan for the Robin matter, and Zoro Kizaru for the Ray parallels. The M3 doesn't have to defeat their opponents, just to push them back. Then the Admirals can become main fights for Dragon/Sabo/whomever else.
Point is, in this scenario I've always pictured Kizaru's light sword nicely contrasted by Zoro wielding a black blade. The visual alone makes it interesting.

But then again, Oda hasn't been a very logical guy when it comes to fight progression or even PU mechanics.

I think most of them are weak, then you might have the outliers, like the Gorosei (Mars and Topman hakis got quite a good exposure in Egghead. No reason to think Nasujuro is behind), then MAYBE Shamrock due to the whole Shanks comparison, etc.
