I just realized this is actually a really simple explanation.
Why did Roger/Rayleigh/Gaban not sense the mecha heart in Sommers/the hearts being the weakness of the God's Knights?
Imu is a Haki Master and can use the Conqueror's Haki technique, Observation Killing.
In other words, Imu's Haki made it so others couldn't sense their abnormal hearts in the first place.
I doubt Roger ever surpassed Imu in Haki, so, it makes sense his crew was never able to kill them: Gaban only learned God's Knights can die from Harald/Loki's fight.
There's also a chance in the future that some God's Knight with Life Return/Seimei Kikan will be able to actually move their heart around inside their body to avoid attacks.
But, yeah.
Observation Killing is the reason the Roger Pirates could not sense they God's Knights hearts are their weakness.
This makes me further believe that Sommers heart is unnatural, because, if it was, Gaban would have seen it while cutting up Sommers in the past.
I still believe the Roger Pirates almost killed Sommers, and Vegapunk was forced to make him a heart to save him. Vegapunk joined the WG 26 years ago, Roger Pirates reached Laugh Tale 25 years ago.
Obviously, from Harald, we know the heart is the weakness, but, I think Sommers' heart is still a special case.
