Wano specifically specified that the advanced appilcation = no touch though.

While the summary says Sanji straight up just has ungodly levels of Armanment Hardening. This is further backed up by him calling himself the shield. Meaning, Sanji went the route of boosting his defense, which in turn boosted his offense.
