Zoro and Sanji didn’t even fight anyone strong. Both Luffy and Loki ignored their opponents cuz they weren’t worth fighting.

Even if Adv CoC was the missing piece that they needed to get strong it still doesn’t change the fact that Luffy still has Ryou 3.0 and future sight over both of them. Even with those two advantages. He still had to go through multiple power ups just to get past Kaido. You might think the gap is small because of CoC but there is a lot more to it than just a single power up to bridge that gap.

Kaido's slashes were afterthought tier. That's like saying Capone or Hawkins could hang with Luffy just because they use seastone

As for durability, I don't think Luffy is one shotting either guy. Sanji ate a kick from Imu/Kizaru and now his defenses are considerably higher than they were

They are ultimately at eos going to be at the same level. That's the core of what the m3 is luffy being a great captain and having crewmates that would also be great captains. It what makes luffy crew special and why he isn't stopping at just yonko level.

I would want to see them both fight serious opponents first. Luffy is struggling vs BBEG, Sanji & Zoro have practice dummies, and even then Killingham did some damage to Sanji before Sanji stopped being suicidal.
