Hmm that's a good question. I like Kaneki, Touka, Uta, Eto, Mr Yoshimura, Rize, Juzo, Akira etc off the top of my head. There are some others like Noro and Tatara or even Ayato that I'd like to find out more about but they look promising.

Interesting, so they did get under your radar... But I expected it. When I started reading TG I already knew way too much and thus, I was vigilant regarding certain things. I'm curious as to what your reaction will be like if you don't really know about any significant spoilers.
On a side note, it's a shame that it all ended. I would've loved some spin offs about some characters.

I was mostly spoiler free ngl. The only thing I knew was that Kaneki gets turned into a ghoul cuz of going on a date lol, and that he eventually snaps and becomes crazy. Besides that I don't/didn't know much else.
