If we consider the whole fights, Sanji vs Queen had almost always a good level of animations with some peaks.
Zoro vs King had shit animations until 1062, which is just the best animated fight episode of this anime, so it's hard for me to choose overall.
Zoro vs King was already my favorite Zoro fight in the manga speaking about choreography (the best Zoro fight is still Daz Bones overall).
In the anime, with this festival of effects and exageration, it's even better. It was like a japanese stylish action videogame bossfight lol.

They nerfed ACoC Zoro a bit because the fight was prolonged and the fight itself was too much Dragonball Z style, but the overall episode was lit, gorgeous animations and choreography.
I think Toei even made better the final clash between Zoro and King because in the manga was just a reference...
Personally I will enjoy tomorrow episode, which will have probably better fight choreography than Sanji's one.
Sanji vs Queen had a great story and character development with decent choreography and pretty good animations in 1061, Zoro vs King will be the opposite. Both good in their way.
To sum up the entire Sanji vs Queen fight, I think that it could be the best Sanji fight so far.

Queen was too much a static opponent and his powers weren't used in an intelligent way, that's for sure, just a random spam of lasers and in the end some Germa's moves.

These 4 last fights were also hyped by Toei with that double page poster.

The answer is either Burgess or Lafitte.
Lafitte is a good candidate, but the fact is that Sanji's main fights have always been, in the large part, against gag-type characters:
- Mr. 2
- Jabura
- Absalom
- Wadatsumi
- Queen
with the only exception represented by Kuroobi.

I'm still on the Burgess train with Sanji and I think that Kuzan will betray Teach later on, so he won't be a real enemy.
BUT
assuming he's a real BB Commander, I'd say Yamato. 10 SH Commander vs 10 BB Commander, ice vs ice, Yamato is already strong and can have a power up to beat an Admiral...
