Pixar and other companies roll with very different styles that have little to do with the way a manga like One Piece has got to be paced. It's a very different kettle of fish, different dynamics and timings.
Oda had not necessarily to copy Pixar or heavily stick to its writing techniques. That's a predefined set of rules that doesn't necessarily fit a story like One Piece, in fact it would not in my opinion.
