How do we know which color spread are canon and which one isn't? Like the color spread of the vice captains is it canon, or the color spread of reiju being a pervert..... we've seen her with lots of women but she doesn't behave like Sanji and she's never even seen tashigi or what about the all female color spread?

The one with the number 2 has nothign "canon" about it.
But it's clearly a spread with the theme "These are number 2 in their respective crews".
There is no canonicity, it's just the theme of the drawing. It doesn't depict an event happening in the story, is just a spread of people sharing one theme.
Just like the girls's spread is about them all being girls.

It is not confusing , it is the person you are replying that is wrong about color covers being canon .
Only cover short stories are canon , regular cover illustrations are not even the colored ones
