Imu and the Gorosei are immortals, I think the SHs will get their own immortality to fight the CDs.
I think chopper will do it. His dream is to cure all diseases. Immortality is basically that cure, a cure for death itself.
I think Chopper will use his medical skill to create a philosopher’s stone, allowing the SHs to gain immortality. I don’t think all of them will take it, but Luffy and probably Zoro at least will.

Immortality suits them. They might actually need it due to how injured they get in battle.
I think the instructions for creating a philosopher’s stone will probably be found in one of the poneglyphs, maybe in laugh tale or lodestar. However it will probably be near impossible to create. Maybe part of the poneglyph is missing or the instructions is leaving something out.
That’s why Crocus was never able to make one for Roger. But Chopper, being as skilled as he is, will find some way to create the stone and give immortality to Luffy and Zoro.
