There weren't too many instances of force users straight up levitating around from one place to another without their legs. Dooku without any of his limbs would be severely compromised in this fight and would get chopped up.

Even his telekinetic abilities would be limited (and no force lightning either) since pretty much every force user has to have arms to utilize those.
