First off I want to explain what I think Future Sight is, and then I'll support it with a few things.
I think Kenbunshoku Future Sight is the person being able to empathetic link themselves to their specific opponent/opponents, that way, it allows the character to not only know what their desires and stuff are, but also the specific moves they are going to do ahead of time. Of course it's not purely "I relate, therefore I stronk", it's being able to read a persons intentions and not simply their physical placement within the world currently, as basic kenbunshoku, and with it, they are able to know what the opponent is planning to do before they do it.
Who are the people who have future sight? Luffy, Katakuri, and there is the widespread hypothesis that Aokiji used future sight to avoid Whitebeard's attack during marineford, despite WB being a haki user. And what do these 3 characters have in common? They are empathetic beings (aokiji and luffy prove this every time they are on screen, while katakuri showed it in a few moments like when luffy was stabbed and so forth, plus his love for his family too). It is this empathy that allows them to not only read the physical state of the opponent, but also their intent behind their actions. This is why someone like akainu would be 100% unable to have something like future sight, and why people like kaidou, big mom, etc are unlikely to have it despite being much stronger than people like luffy, aokiji, and katakuri. It also might mean that shanks will have it as well potentially (depending on how oda uses his character with all the mystery going on with him)
It doesn't make sense that the characters are literally breaking the time-space barrier with kenbunshoku (which is about sensing what's there) to predict the future.
Anyway this is different to hawkins statistical analysis depending on a situation (though there is probably some kenbunshoku involved there, we need to learn more about hawkins tbh), or the mermaid fortune teller who GENUINELY reads into the future. It also explains why having emotional outbursts actually stop the user from using future sight, if you aren't focused on the individual and being able to calmly read the intentions, feelings, etc and understand them empathetically, you are unable to use the technique.
Also it'd be a great way for Sanji to prove to his father that empathy is NOT a weakness, which is the main crux behind their conflict, and what the whole "wall" of clones things was built around, not out of fear of sanji, but out of teaching his son a lesson that empathy is a weakness. If sanji gains a tangible power-up out of empathy, it could be a nice physical touch to illustrate that your ability to connect with others is a strength. Also Luffy's entire characterization is that he empathizes with everyone, no matter their race, aesthetic appeal/or lack there-of, position in society, etc etc, so it makes sense that Luffy specifically would be able to have that power, without it just being a matter of "he is stronk boi who gets all the power ups" like ichigo in bleach.
