I think it could be because it has some importance and he is saving it.

Gunko is a woman and Oda typically has women fight other women. Especially if the female antagonists are hot. This means Gunko is a possible fight for Nami, Robin, any of the giant gals, or… Bonney.

Since we know Bonney is of CD ancestry, could it be the case that Gunko is actually Bonney’s sister? Bonney’s name is Jewelry Bonney. Yet Kuma was her father and Bonney was always proud to be Kuma’s daughter.

Where does “Jewelry” come from? Bonney’s backstory suggests maybe it’s a nickname, as Kuma called the gems from Bonney’s disease her “jewels”. But that still shouldn’t be portrayed as her surname. In that case Jewelry would be her epithet. She would be Bartholomew “Jewelry” Bonney.

… unless, Jewelry is the name of her CD father.

I dont like this. I thought the Jewelry thing was given to her because of the piercing which replaced the Sapphire Scale on her face.

Jewelry Gunko also sounds kinda ass tbh. It fits better with Bonney but doesnt fit with Gunko-chan.

Theory must be more original and unique in order to get the Gunko fans on board.
