Upon his introduction, he was challenged by Zoro (a much weaker opponent at the time), and easily won. Yet, he decided not to kill someone who's entire ambition was centered around defeating him.

Then, it was revealed that he refused to fight a handicapped person, because he did not feel it to be fair to them. Another act of courtesy and respect.

AND THEN

He informs a much weaker character, Jozu, that they should postpone their battle. Both saving his life, and giving him an opportunity to get stronger.

AND THEN

He allows Zoro to train under him, despite knowing that this would only lead to his future defeat.

AND THEN

He allows Buggy to take credit for his actions, showing a lack of ego.

All of this sums to an extremely respectful and honorable man.

I wouldn't say hes a 100% honorable person. Since selfishness is part of his character.

And the 1st time meeting Zoro he wasn't very honorable with him at the start.. The man outright toyed with him and called him weak etc.. But after witnessing Zoro's resolve he then showed respect and to "honor" him he defeated him.

Remember Marineford? 2 Okamas have challenged him even though they were weak he still couldn't bring himself to honor them and gives them their due. He beat them and called them insects.

Mihawk like any character in OP is flawed and this is good because a character with no development is never interesting.

Mihawk is probably a Royal, we don't know anything about him but he's too sophisticated to have been some homeless kid that liked to fight with swords.
