Imo Katakuri wins.
Round 1: Low diffs.
Round 2: Low-Mid diffs.
Superior speed and AP/durability, shapeshifting including "logia" intangibility, pre-cog which is advanced enough to see a few secs into the future, transmutation, lethality with stickiness and Mogura - he takes it.
Ulquiorra has his cero and other ranged attacks but I doubt he can win against Katakuri.

Sado / Chad is perfect match up for Sanji.
Both fought with their body (fist and kick) who later received mechanical PU (Sado's arm and Raid Suit), both used to be looking strong, both have 1 of their eyes covered, but biggest similarity is both are offical hypetool and punching bag for both series.

Ulquiorra wins quite easily tbh. Yes future sight will help kata but at the end of the day Ulquiorra's power is far stronger, take for example his lanza de Lamprago attack which dwarfed Las noches. The fortress is so large it takes day's just to get from one side to the other, kata ain't surviving an attack of that magnitude.
Las Nochas seems to be about the size of a small state / small country (the building shown). Ulquiorra's Lanza is comparable to that.
