What you probably mean is that when Zoro fights Luffy's opponents he generally looks just as good if not better, whereas when Sanji fights Luffy/Zoro's opponents he gets bodied. There are some exceptions to this, e.g - Sanji did alright vs Blueno iirc.

Funnily enough, it's pretty rare for Zoro to fight Sanji's opponents despite them usually having opponents of a closer rank.

We could say almost all strawhats fought Enel or all of them.

Sanji also faced Khalifa. Usopp and Zoro also faced Jabra. Usopp also faced Kaku. I guess Nami was facing that pink hair CP-9 guy before Chopper?

Everyone faced Oars and Moriah.

This happen mainly because Zoro's role/job is combat type.

And all SH must be very good at their job, virtually one of the greatest in the world.

So to showcase this, Oda made Zoro able to fight and win strong opponents, who usually given to Luffy.
