Would cement him as Yonko level if he killed an Admiral
Not really, in fact what happened is exactly what was most realistic to happen.
He most likely btfo'd an admiral. Marines were like WTF, while Mihawk just kept going as usual. He didn't start occupying places, building up businesses or gathering subordinates. So why name him yonko? Instead WG made a bold move by trying to start a new project, The Shichibukai. Kinda ally yourself with people with balls that are not yonko cause they don't fulfill all criteria, so you can challenge the actual yonko with combined forces.
Fits perfect for Mihawk. He beat the marine's strongest force. There's nothing they can give him anymore, other than maybe some money and keeping other marines from annoying him.

Later, after the shichibukai project is cancelled, mihawk is considered an actual pirate. One week later, he supposedly joins some group that has exactly what he is lacking. Influence/territory, wealth, menpower. Even though they know their head is not on mihawk level, they name him yonko because you know why? Because it's Mihawk Mother fucking Dulacre we're talking about here

Oda chose to write a Story where Zephyr lost an Arm to a Pirate other than an Emperor, and He picked someone who became Warlord, so it's someone who is Independent & doesn't work with some Major Faction. Even though it's Non-Canon ofc, but it shows that Oda does think of such Scenarios or Backstories

We don't know when Sengoku became Fleet Admiral, but there were at least Two others
Oda can easily write a Backstory where Mihawk took one down, and the Z Movie proves that Oda is prepared to write such Scenario where WG don't mind recruiting someone who Defeated an Admiral

Also according to WB's Words & Databooks, Shanks gained massive Fame from Dueling Mihawk, meaning that People considered Mihawk Super Powerful even long ago (Before He joined Shichibukai) & without meeting him, so if Crocodile brought up that "Marine Hunter" Epithet, then before Shanks Duels, Mihawk became Worldwide Famous by possibly Defeating an Admiral

Another thing to note is that "Marine Hunter" Epithet is supposed to Parallel Zoro's "Pirate Hunter" Epithet, and the Incident that really stuck with Zoro even in New World is when He defeated 100 Baroque Works Agents, so it's possibly that for the Parallel to be even more consistent, Mihawk also defeated a Large Group of Marines, which does sound similar to Zephyr's Situation

So Overall, We don't have any Clue about Someone who was Defeated by Mihawk, but it's clear that the Scenario of Mihawk gaining his Epithet due to Defeating an Admiral is very possible & easily justifiable & Oda doesn't mind such Backstory

I think the idea that they WSS priot to Mihawk was an Admiral that Mihawk killed after he was pissed over Shanks losing his arm would work for a good hype feat. Oda could easily introduce this with Sengoku having a flashback when he hears news about Garp's capture/death about him losing another one of his old buddies and maybe being sad that only Tsuru, himself, and maybe Kong are left.

Look, at the end of the day? Oda chose to make him the Marine Hunter for a reason. It could be that it was a similar situation to Zoros, and he never really killed any big name Marines, but my money is on him having killed at least one of the two unknown Admrials of Rogers time.
