What if Garling has the Fenrir Fruit? Or becomes the Youkai Fenrir? Garling has been teased so much... and is the only Gorosei we haven't seen fight.
Imu sending Garling to Elbaf as a "prove it" kind of deal works well, and also fits with Shanks having recently visited Elbaf. Garling attacking a place Shanks is fond of would be fun.

Unsure what power he will have am curious myself, something moon related probably? There's Moon Rabbit in asian mythology but that's not as demonic for Gorosei so idk
Fenrir is an option but then Loki has def Surtr
Another possibility is Imu can draw the devil fruits to his garden to those he made a "pact" with so Garling automatically gets the Ushioni, but idk if that fits his fighting style and he may have already had a power previously as holy knight captain
I think we should also rule out Zoan models of Horse/Bird/whatever Jupeter's and Warciry's cageory falls into, to be the same as Garling, they each will have a distinct zoan model.
Tbh Oda could just spin a wheel of mythical creatures and go with that for all we know
