Zoro would be perfect as MC. Manga about Bounty Hunter. He wouldn't have a crew though I believe so. Maybe he would have some random companies like those followers of him during Baratie and Arlong Park arc.
Sanji seek for All Blue would be cool too.
Robin seek for Rio Poneglyph would be awesome.
Usopp seek to be a brave warrior of the sea would be cool too.
Others I don't think they would be cool.

Coby or Garp for a marine perspective. Both characters are very similar to the MCs of some other Shonen.
Zoro - stoic emo swordsmen always sell amongst the younger audience who eats that shit up.
Sanji - a chef traveling the word learning the greatest cuisine and seeking the all blue could be interesting.
Robin - if she was actually strong and lived up to her potiental, then a story about her journey would also be interesting.
Yamato could also work but most of the Oden stuff would need to be dropped.
