Sanji's Baratie character arc revolved around taking that first step towards following your ambitions/dreams, even if it means death. It's what he learned from Luffy, it's what he learned from Zoro, and it's what Zeff has been subliminally lecturing him on all throughout the arc.

So ask me, what sounds better: Sanji remaining consistent with his character growth from back in Baratie, or regressing for the sake of a life that's already secured due to plot armor?

That's the thing, Sanji hasn't been put in such a position cause it doesn't make much sense. No one knows about the All-Blue due to it being a mythical sea so we simply have Oda have him state it's his ambition and that he'll find it in Zeff's place. It's not something Oda has gone out of his way to show Sanji is willing to die for but there are plenty of other times his determination is shown.

Sanji already showed that he'll die for Zeff if necessary, that he'll die for Luffy, Zoro and the crew if he feels it's needed. He'd die for his virtues as he repeatedly states that he'd rather die than kick a woman. I doubt he'd die for all that then give up his ambition if the time comes, especially considering that he's aware Zeff lost his dream to find that sea due to saving Sanji's life.
