He‘s also immune against any attacks and can just dissolve if he wants. Amaterasu could pose a threat, but he has Haki to see that coming and destroys Itachi before he even uses.

Haki. We have illusion type DFs - Brook(puts asleep), Mont Dor( creates illusion space ), Laffite's unknown DF, Harald resisted to a top mind control ability for a while. All these powers could be resisted thanks to haki.
