We know from Kuma that the Bible exists within One Piece.
If you look at the book Ivankov and Sabo are reading, look at what its name is, written on its cover, in the mid-right panel, Genesis. Genesis is the first book of the Bible.
So Ivankov and Sabo use the Bible as a source when talking about in-story lore.
